Best Vegan Porridge

I have been trying to find the combination to create the best vegan porridge and I have finally created the recipe that works for me (and surprisingly, my not vegan partner).

Ingredients

50g oats

200ml oat & hemp milk (unsweetened almond milk will work too)

1 square (25g) of dark chocolate - minimum 70% dark

10g protein powder (optional)

1 tablespoon peanut butter

1 ripe small banana

a handful of raspberries (or any other berries)

1 full teaspoon of chia seeds

2 teaspoons of sunflower seeds


Let's prepare our porridge

  1. Smash the banana in a pot until soft and without lumps

  2. Add in oats, milk and dark chocolate

  3. Bring to boil and let it simmer from 3-5 minutes until you reach the consistency you like (I personally like mine runny but not completely liquid, so I cook it for about 3 minutes). Then add peanut butter just as you are ready to switch off the hob

  4. Add in protein powder if you are using it

  5. Pour mixture in a bowl and let it sit for a couple of minutes to chill

  6. In the meantime, wash raspberries or other berries (strawberries or blueberries work great)

  7. Decorate your porridge with berries and seeds on top

  8. Mix well and enjoy!

The ingredients serve 1 person or 2 small portions. This recipe usually fills me up for the entire morning.
