Dairy-free Banana Bread

The 'lockdown' dessert of choice by many, but I bet you haven't tried this variation! There are so many recipes out there and I have tried different ones, but this one is by far my favourite one. I made it dairy free as I have been having some issues with lactose.

Ingredients

  • 250g bananas (roughly 3 small or 2 large ones)

  • 100g flour

  • 60g coconut oil

  • 60g sugar (I use demerara sugar as it gives the best consistency, but unrefined cane sugar will work)

  • 1 egg

  • 3g baking powder

  • 2g baking soda

  • pinch of salt

  • a handful of dark chocolate chips (optional)

  • a handful of chopped pecan nuts (optional or any other nut type)

Let's bake!

Begin by smashing the bananas with a fork in a bowl, they should be smooth like a puree. If you don't want them to go brown, add a few drops of lemon juice.

In a separate bowl, mix the sugar with the coconut oil which shouldn't be melted, but only soft, until smooth. Then add in the egg and continue whisking with a fork.

Add in the salt and the baking powder to the mix.

Now pour in the banana puree and mix until smooth.

Lastly add in the flour by sifting it if possible, and the baking soda for last.

Mix well until all the ingredients are blended. If you'd like, add in the chocolate chips and the pecan nuts.

Bake for 60 minutes in a static oven, at 180°.


Serve with fruit, ice cream or eat alone.
