Edamame pasta with vegetables

If you are looking to increase your protein intake, try this edamame pasta with loads of vegetables.

I personally try not to eat meat for ethical and environmental reasons, so I try to be creative when it comes to finding plant-based sources of protein. Edamame pasta is now my go-to when I want a nice quick meal that will keep me full throughout the day.


50g edamame pasta (my favorite brand is Explore Cuisine and for this dish I like spaghetti)

About 1 broccoli tips

A handful of rocket

3 sun dried tomatoes

2tbsp of pesto

You can add any vegetable you like of course!

Let's start cooking

  • Wash and chop broccoli in bite size bits

  • Boil broccoli in salted water for about 5 minutes

  • Add edamame pasta to the same pot where the broccoli are and follow cooking instructions (usually 3-5 minutes)

  • Drain and mix with chopped sun dried tomatoes, 2 tbsp of pesto and rocket

  • Serve warm
