If you are looking to increase your protein intake, try this edamame pasta with loads of vegetables.
I personally try not to eat meat for ethical and environmental reasons, so I try to be creative when it comes to finding plant-based sources of protein. Edamame pasta is now my go-to when I want a nice quick meal that will keep me full throughout the day.
Ingredients
50g edamame pasta (my favorite brand is Explore Cuisine and for this dish I like spaghetti)
About 1 broccoli tips
A handful of rocket
3 sun dried tomatoes
2tbsp of pesto
You can add any vegetable you like of course!
Let's start cooking
Wash and chop broccoli in bite size bits
Boil broccoli in salted water for about 5 minutes
Add edamame pasta to the same pot where the broccoli are and follow cooking instructions (usually 3-5 minutes)
Drain and mix with chopped sun dried tomatoes, 2 tbsp of pesto and rocket
Serve warm
