I will admit, I am not a super fan of tofu and I rarely use it when I cook, but last week we prepared a home made Pad Thai, so I had some left over that I had to figure out how to use. Well, I think I will start using tofu more in my dishes! I put together a quick and delicious lunch that left me very surprised. So here you go!
Ingredients
Recipe serves 1 person
100g firm 'naked' tofu (about 4 slices - I used tofoo)
2 thick slices of bread (I used sourdough)
100g cherry tomatoes
2-3 leaves basil
2 large fresh figs
Olive oil & salt
Method
The whole recipe requires maybe 10 minutes in total, depends on how quickly you pull out the ingredients, wash them and slice them :)
Start by slicing the tofu in 4 slices - about 1cm thick
Chop the cherry tomatoes or slice them in half, depending if they are big or small
Slice the figs, about 1cm thick
Reheat a pan until hot, place the tofu on it and grill 3-4 minutes on each side, continuing to turn so that it doesn't burn
When the tofu is almost ready, add in the figs and turn repeatedly so they don't stick to the pan
Toast the bread if you like it toasted
Assemble your plate! Place the two slices of bread, add a drizzle of olive oil, place the tofu on top, the grilled figs, and cover with cherry tomatoes and basil
Dress how you like - balsamic vinegar, salt, olive oil, walnuts...be creative!

Tofu is a great protein source and can be added to your weekly meal plans, especially if you are looking to reduce your meat, dairy and fish consumption!
For about 100g of tofu, you'll get about 13g of protein.
