As a mom, I try to be as efficient as possible, especially when it comes to feeding my family. I always like to try and find recipes that work for everyone, from babies to grownups, taking into consideration different dietary factors (vegan, no sugar, dairy free, etc).
So I finally created a super simple and delicious recipe that makes everyone happy: try these sugar free banana and blueberry muffins!
Ingredients for 12 muffins
150g frozen blueberries
4 ripe bananas
3 tbsp milk (I used almond)
3 tbsp melted coconut oil
200g flour
50g ground almonds (could use coconut)
1 tsp baking soda
1 tsp baking powder
Let's bake
Set oven at 180 degrees - fan setting
Mash bananas with a fork
Add milk and coconut oil till smooth
Add flour, baking soda, baking powder, ground almonds and whisk until the batter becomes smooth
Add in the blueberries
Cook for 30 minutes
Store muffins for up to 3 days in airtight container. They are also great for freezing in case you make more or have leftovers.
