Vegan burrito

Try out this delicious and nutritious burrito that will make you feel satiated throughout the day.

Ingredients for 2 burritos


2 wholemeal tortillas 1 cup black beans 60g spinach 1 medium sweet potato 1 small avocado 1 tsp crushed chillies 1 tsp paprika 1 tsp ground cumin 150g brown rice 50g sweet corn 80g yellow pepper 1 shallot 1 tsp parsley 1 tsp olive oil

Let's start cooking

1. Boil rice

2. Chop peppers and sauté with olive oil and shallot 3. Boil black beans or drain from can if using pre-boiled beans, then add spices (cumin, paprika, chillies) and spinach for 1 minute at the end, mix well

4. Peel avocado and smash with fork 5. Drain sweet corn 6. Prepare burrito: open tortilla, spread avocado, add rice, beans, peppers, spinach and corn, add parsley 7. Wrap and enjoy

Serve and store

You can serve with lemon / lime juice if you'd like and extra side of homemade guacamole.
